Scrummy vegetable-packed Bolognese

Do you have a tricky time tempting your little ones to eat more vegetables? Then look no further - try this tasty Bolognese recipe, packed full of veg.

How to make it

If you use 500 grams of lean beef mince for this recipe you'll have plenty for dinner together as well as some extra you can freeze for the kids in small pots.

  • Fry a diced onion in a small bit of oil, add two chopped/crushed garlic cloves

  • Add the mince and fry until brown

  • Add a third of a courgette (diced) and half a pack of chopped mushrooms

  • Grate the remainder of the courgette and two carrots, and add them to the pan (the kids are so focused on picking out the diced courgette they don't really notice the grated bits of veg)

  • Add a tin of chopped tomatoes and half a pint of water, and sprinkle on some Basil or Oregano and some black pepper

  • Cover and simmer until everything is nice and soft and there's hardly any liquid left in the pan

  • Try serving with wholemeal pasta twirls or Spaghetti
